Born in 1955 on Santa Maria Island, Ernesto was set to emigrate, following the path of so many Azoreans before him. But his passion for graphic arts and the freedom to do what he loved kept him anchored to the islands, ignoring the calls from Canada.

Austa, founded by David Campus, stands out for its approach to Mediterranean cuisine. Passionate about the flavours of southern Portugal and Andalusia, the Austa menu is inspired by the culinary traditions of the region, featuring dishes that highlight local and seasonal ingredients. The décor reflects simplicity and elegance, creating a welcoming and contemporary atmosphere.

The firm voice, shaped by salt and time, echoes through the corridors of the Olhão Market. João Raimundo is where he has always been, with steady hands and a keen eye, selecting, weighing, and suggesting. Here, each fish has a story, every choice a gesture learned through the patience of the days.
